Shirazi Salad

This crisp salad makes a refreshing accompaniment to heavier foods because it’s dressed very simply with fresh lime juice. There are many variations of this salad, I like to include pomegranate and dried mint.

Ingredients:

Serves 4 to 6
1/2 kg peeled, cucumbers sliced in half lenghthwise
1/2 kg diced tomatoes
1/2 diced white onion
seeds from1 large ripe pomegranate
2 tablespoons chopped parsley
1/2 cup freshly squeezed lime juice
sea salt and freshly ground black pepper

Method:
Seed and dice the cucumbers, combine them with the tomatoes, onion, pomegranate and parsley.
Add the lime juice, season with salt and pepper, stir gently to mix. Serve immediately.
